ABOUT OUR MENU: We believe Cuban food can be FARM to TABLE too! We source all our proteins & most of our ingredients LOCAL, ORGANIC, PASTURED, & CHEMICAL FREE. Our Mission is to help re-connect people to natural foods in accessible ways, alongside joyful togetherness, celebration of Cuban culture, & live music.
We combine traditional Cuban flavors with local ones, use seasonal, predominantly organic, and responsibly sourced ingredients while providing delicious inspired options for omnivores, carnivores, vegetarians, & vegans alike! We’re debunking the idea that Cuban / Caribbean food is just about pork, beans, & fried foods.
We source our meat and dairy responsibly from farms committed to humane animal treatment, grassfed, free access to pasture, and no hormones. This philosophy extends to not just meat & dairy but to our seafood, coffee, vegetables, and even beer and spirits. See more info below about our farms and purveyors.
DAIRY from Battenkill Creamery who are committed to Environmental stewardship of the farms ecosystem, Humane Animal treatment, Cows are fed with a grass-based diet and have free access to pasture, NO rBST or other synthetic hormones given to any of our animals, Locally produced & processed, Low-temp pasteurization, Worker welfare at all stages in the chain.
SEAFOOD We are extremely proud to offer seafood from Sea to Table who partners with local fishermen from small-scale sustainable wild fisheries, finding better markets for their catch. Delivering overnight, direct from the source, allowing diners to know the ’who, how and where’ of the impossibly fresh fish they enjoy, creating a direct connection from fisherman to chef. FARMS We source from a number of local & regional farms including but not limited to Stick & Stone, Cayuga Pure Organics, Rogoswski, Local Roots CSA, Phillips, Satur, & Happy Valley.
COFFEE/ESPRESSO by DEVOCION Their beans are fair trade, organic from small bio diverse farms in Colombia and roasted locally in Williamsburg, Brooklyn.
BEER Our beer program features a handful of select Latin American beers with the rest all hailing from New York State. We have a rotating selection from Brooklyn Brewery, Sixpoint, Ithaca, BluePoint, & Fire Island. Currently on tap: Brooklyn Radius, Ithaca Apricot Wheat, Single Cut Chocolate Stout, Captain Lawrence IPA, Brooklyn Brown Ale, Modelo Especial, & Presidente.
WINE For our wine list, we have sought out small family wineries in Spain who employ centuries old organic techniques many of which come from Vinos Libres “naturally sustainable – dry farmed without pesticides, herbicides and hand harvested with minimal impact to the environment..free of any kind of manipulation, free to express its age and origin – natural honest wines.” We’ve also added to our list, local organic wines from Upstate New York & Long Island.
SPIRITS & COCKTAILS Our cocktail program focuses on classic cocktails from 1920-1933 Prohibition & 1934-1950s Post-Prohibition in Havana, Cuba & NYC, reinvented using local & seasonal herbs & flavors, home-made syrups & bitters, bits of magic and lots of love. Our cocktail menu has spirits of all types but pays special celebration to our big delicious list of Rums!
